Ingredients:

  • 2 cups sugar
  • 1/2 cup corn syrup
  • 1/4 cup honey
  • 1/4 cup water
  • 2 egg whites
  • 1/2 teaspoon vanilla extract
  • 1 cup nuts (almonds, pistachios, etc.), toasted

Instructions:

  1. Prepare Baking Pan: Line an 8-inch square baking pan with parchment paper and lightly grease it.
  2. Heat Sugar Mixture: In a saucepan over medium heat, combine sugar, corn syrup, honey, and water. Cook, stirring occasionally, until the mixture reaches 300°F (hard-crack stage) on a candy thermometer.
  3. Whip Egg Whites: While the sugar mixture cooks, beat the egg whites to stiff peaks in a large bowl.
  4. Combine: Once the sugar mixture reaches 300°F, slowly pour it into the beaten egg whites, continuously whisking. Add vanilla extract and keep beating until the mixture becomes thick and glossy.
  5. Add Nuts: Fold in the toasted nuts.
  6. Spread into Pan: Quickly spread the nougat mixture into the prepared pan. Smooth the top with a spatula.
  7. Cool: Allow the nougat to cool completely at room temperature. Once set, cut into squares or bars.

  • Use a candy thermometer to accurately measure the syrup temperature.
  • Work quickly when combining the hot syrup with the egg whites and pouring the mixture into the pan, as it sets fast.
